mutton gravy

Mutton - 750gms For masala paste Small onion - 12 Garlic - 10 Ginger - 1inch Pattai 1inch Clove - 2 Sombu 1/2 tsp Jeera 1/4 tsp Pepper 1tsp Bydagi chilly - 1 Corriander leaves - little Curry leaves - little Tomato - 1 small Saute in oil and grind to a nice fine paste Mutton gravy Add coconut oil, and add 1tsp kal pasi, 1 briyani leaf, 1/2pattai, 1elachu and 2cloves. Add curry leaves and onions (1large and 15small) cut to small pieces. Once onion is golden brown, add 1/2 turmeric, 1 heaped t.spoon corriander, 1tsp kashmiri chillly powder and 1tsp mutton masala and saute till raw smell goes Add mutton and saute till water comes out Add in ground paste and salt Add v.little water and 1tbsp coconut oil Close and cook for 7whistles (3high, 2low and 2medium)

best paneer butter masala

serves 4 Curd paste 1.5 tbsp curd 1pinch turmeric 1/2 heaped tspoon corriander powder 1/2 t.spoon kashmiri chilly powder Mix all the above ingredients and add a small cube of butter to it. Gravy 1 onion, 1/2 inch ginger, 4garlic, 1bay leaf, 2cloves, 2cardamom, curd paste, 3tomato, 9cashew, 1 green chilly, 1kashmiri chilly deseeded Heat 2tbspoon ghee, 1tb spoon oil, add whole spices and chopped ginger, garlic and onion. Once onion sweats, add curd paste and saute a couple of minutes. Then add cashew and chillies. Saute a little more, add tomatoes and salt. Saute until tomatoes turn mushy and oil separates. Remove the whole masala and grind.Then add a little water if necessary. Grind this to a paste. Final gravy 1/2 onion, 1/2 tomatoe, 1/4 tspoon kashmiri chilly powder, 1tspoon honey, kasuri metho, butter. Mutton Biryani - Seeraga samba rice

Paste 1 Shallots - 20 Garlic - 10 Ginger 1.5inch Green chilly 4 Paste 2 Sombu 1tbsp Kal pasi 1.5 tsp Clove 3 Cardamom 2 Star anise 1/2 Mase 2 snall Bay leaf 1 Pepper 1tsp Other ingredients Seeraga samba rice 2cups ( Soaked 20min) Mutton 500gms Pudina 2handful Corriander 2handful Curd 1/3 cup Juice of lemon 1 Onion 2 medium Tomato 2 Ghee Oil Salt Chilly powder 1tsp (according to taste) Pressure cook mutton with salt for 5whistles and keep it aside Add oil+ ghee to pan, add onions, salute until brown Add masala paste 1, saute until raw smell goes Add tomatoes and cook until mushy Add the paste/powder 2 and saute until raw smeel goes Add cooked mutton pieces, only pieces Saute well, add pudina and corriander, curd and lemon Measure and add mutton stock  And allow to boil for 20min in a closed container  Now add soaked rice and the remaining water as hot water  1cup rice = 2cups water Allow to cook for 10min Then put on dum and cook for 10min

Potato - 6 small ones ( washed and cooked for 1 whistle) Paste Handful corriander leaves 2 cloves .5 inch cinnamon 1 cardamon 1tbspoon bengal gram 1tsp fennel 1tsp kas kas 4 cashew 1/4th coconut G.chilly 2  Grind to a fine paste For curry Fennel .5 tsp Kal pasi 1 t.sp Cinnamon .5inch 1 clove and cardamon 1bay leaf Onion - 2 ( chopped very small pieces ) curry leaves - few G.chilly 3 Gin gar paste 2.5 t.spoons Tomato - 2 copped small Pudina and corriander - one handful chopped small Turmeric powder 1tsp Kashmiri chilly powder - .5tsp Chicken masala 1tsp Drumstick 1 Frozen peas - handful Method In a cooker, add oil ( little extra). Add fennel and spices. Once it releases aroma, add onion and saute till translucent. Add curry leaves and chillies. Muslim Chicken Biriyani

Onion 200gms / 3 Tomato 200gms /3 Garlic and ginger 25gms each paste G.chilly 2 Corianderand pudin3 2handful (my hand) 1tbspoon red chilly powder 1tb spoon salt 1/2kg chicken  1/2kg rice 100gms oil 2cloves 2 elaichi 1inch cardamom  Curd 100ml In a cookers, add onion, oil and spices and switch on flame. Once onion brown, add coriander saute for a min Add pudina, saute for a min. Add ginger garlic paste. Once oil separates, add red chilly powder and salt. Then add tomato and curd. Saute until oil separates.  Add chicken and saute well. Add water 1:1.5 Once water boils, add rice Allow rice to boil for 2min. Add 1/2 lemon Then check seasoning and close for one whistle

Mutton Kulambu No 2

Mutton 500gms Masala Corriander seeds 25gms Jeera and fennel seeds - 10gms each Pepper - 10gmz Red chilly  - 10nos 3cloves 1inch cinnamon  1 elachi Curry leaves 1 bunch Saute all the above in medium flame with little oil, add 1tb spoon poppy seeds and Grind to a nice powder  Onion - 250gms Ginger 1 inch Garlic 15 cloves Coconut - 25gms Saute in oil and low flame, add Coconut at last and saute fir 2 more minutes Add this to the powder and Grind to a smooth paste Add oil in cooker, 1 onion chopped, add Mutton. Rice - 1.5cups Chicken- 500gms Onion - 2 sliced big Tomato - 2 sliced big Ginger garlic paste - 1.5tbspoon G.chilly - 6 Turmeric powder- .5tspoon  Red chilly powder kashmiri - 1t.spoon  Corriander powder- 1.5 t.spoon  Jeera powder - .5tspoon  Garam masala - .5tspoon Chicken masala- 1t.spoon  Palak - 1big bunch cleaned and chopped. Pudina - 15leaves chopped Corriander - a handful chopped. Add oil and ghee, add spices - 1inch cinnamon,  2 cloves,  1 elaichi,  1 big elaichi,  .5star anise. 1.tspoon whole jeera. Add onions and fru till brown. Add chilly and Ginger garlic paste. Fry for a minute, add tomatoes. Fry till musy. Add salt. Add all the greens. Saute till they make a thokku consistency.  Add all the masala powders. Fry for a minute. Add chicken and saute for 2min. Close lid and cook for 5minutes.  Now add water and biring to boil.
